EFSA has no scientific evidence indicating the existence of a risk from influenza virus to consumers of pork meat, regardless of the type of pork consumed. However, even if some consumers enjoy raw meat, it has long been recommended to avoid consumption, so as to avoid any risk of food borne illness. Thorough cooking of meat can kill bacteria or viruses may be present in food stuffs. It is always advisable to practice proper food hygiene in the kitchen, wash hands and clean all surfaces and utensils with soap after handling raw meat.
